Central Florida’s Best Vegetables to Grow

Gardening in Central Florida is unique because our warm climate gives us two main growing seasons—cool season and warm season. With the right timing, you can harvest fresh vegetables nearly year-round. Here’s a guide, inspired by Month-by-Month Gardening in Florida by Tom MacCubbin, to help you plan your garden.


Cool-Season Vegetables (Fall through Early Spring)

Cool-season crops thrive when temperatures are mild, from September through March. These vegetables prefer the shorter days and cooler nights of Florida’s “winter.”

  • Root Crops like beets, carrots, radishes, and turnips can be planted from fall into early spring. Most are ready in just 25–70 days, making them perfect for quick harvests.

  • Leafy Greens such as lettuce, kale, mustard greens, spinach, and Swiss chard grow beautifully and can be picked within 40–90 days. Many can be harvested leaf by leaf for a longer season.

  • Cole Crops like broccoli, cabbage, cauliflower, and Brussels sprouts do best from September through January. These need more space (12–24 inches apart) and take a bit longer—70–100 days—to mature.

  • Other favorites include onions, peas, celery, and asparagus (though asparagus takes patience—two years to harvest!).


Warm-Season Vegetables (Spring through Fall)

Once the weather warms, Florida gardeners shift to heat-loving crops. From February through September, you can grow a delicious summer harvest.

  • Beans (both snap and lima) grow quickly and produce in as little as 55–75 days.

  • Fruit-bearing vegetables such as tomatoes, peppers, eggplant, cucumbers, and squash thrive in the heat. Most take about 60–100 days before harvest.

  • Big vines like watermelon, cantaloupe, and pumpkin need plenty of room (up to 60 inches between plants!) but reward you with sweet summer harvests.

  • Southern staples like okra, peanuts, and southern peas are also perfect for Florida gardens and handle long stretches of heat with ease.
